Following his graduation from hotel school, Sammy explored various opportunities in hospitality, including stores and purchasing, before deciding to pursue his love of food and cooking. Having quickly worked his way up the ranks, Sammy worked as the Head Chef at what is often dubbed ‘the winelands of Pretoria’, Kievits Kroon Conference, Wellness & Leisure Estate (see Travel Talk, page 128). Not only does this speak volumes about Sammy’s tenacity, it also reveals that he’s incredibly passionate about what he does.
The greatest ingredient for a chef, he says, is being sure of what you want to achieve. ‘Many young chefs get into this career just to earn a salary,’ he comments, and then offers this sage advice: ‘Ask many questions, research everything about the industry and its trends, read a lot, try different cuisines and have a goal!’ It’s clearly the secret to his success.

Sammy’s passion and commitment to the proper training of young chefs speak volumes in the industry, therefore he was an obvious choice in the training of in-service chefs for the Training Academy.

Chef Sammy (as he is fondly known) assists in the facilitation of the National Youth Chefs Training Programme as well as various Training Academy programmes.
