Review: Hawaiian Luau Pop-Up Restaurant

19 June

“Hawaiian Luau” conjures an image of sand, sea and sun with tropical flavours and scents to transport you to islands far and away…

That is what a team of Capital Hotel School and Training Academy students created with their Event Management practical session on Thursday, 18 June 2015.  It might have been a chilly evening in Pretoria, but the ambiance was cosy and the food was amazing.  Well done to everyone involved for hosting such a great event.

Thank you to the industry professionals who joined us on this event, as well as Wetnose for supporting our students.

CHS Professional Cookery event

Menu which was prepared by the Chef-lecturers and Professional Cookery students, included delectable items such as Smoked Chicken Breast served with Asian Salad & Lemon Vinaigrette, and the main course of Marinated Pork Belly with an Apple & Red Cabbage Relish accompanied by Pommes Puree  and Thyme & Port Reduction.  The dessert was an infusion of “island flavours” on a plate with a Coconut Bread Pudding served with Banana Milkshake and Fruit Compote. This celebration of flavours and tastes were perfectly paired with accompanying wines and laughs.
