Paul Carolin began his cooking career in the kitchen, whilst living in London, at the Royal Opera House in Covent Garden.

He excelled in the kitchen environment and experienced the different departments until finally finding his passion in the Pâtisserie department. Whilst working, he completed his Bachelor’s Degree in International Culinary Arts, at the University of West London under Master Pastry Chef, Yolande Stanley.

Highlights from his career include catering for dignitaries of the G20 at the Summit in London, The BAFTA Awards, The GQ Man Of The Year Awards and both the London Olympics and Paralympics.

In 2010 he took a break from the hustle and bustle of London and undertook the mammoth task of completing the Camino de Santiago; walking from London to Santiago de Compostella in the North West corner of Spain, covering more than 2500km in just over four months. .

Upon his return to South Africa he vowed to share his diverse experience and culinary knowledge with enthused young chefs.
