Skills Proficiency Awards in Basic Food Preparation

Ingredients of the Course

There are two related levels:

Skills Foundation Certificate 3528-50
Knowledge and practical competence required in own area of work regarding:

  • Correct application of health, hygiene and safety practices.
  • Cleaning and storing procedures and techniques.
  • Knife skills.
  • Selection of appropriate commodities and equipment for specific tasks.

 

Skills Proficiency Certificate 3529-50
Knowledge components:

  • Maintaining safe working conditions.
  • Adopting safe procedures for self and others.
  • Preparing equipment and commodities for use.
  • Cooking food, using basic techniques.

Preparation

A one day assessment to recognise your prior learning of the competencies required for the above Skills Foundation Certificate, could enable you to progress to the following Skills Proficiency Certificate.

Method

Skills Proficiency Certificate 3529-50
Practical competence:

  • Health and safety; appropriate protective clothing and footwear.
  • Basic First Aid treatments.
  • Identification of faulty equipment.
  • Responsibilities of a Food Handler to employer and public.
  • Applying good housekeeping practices at all times.
  • Proficiency in food preparation and cooking:
    • Raw and cooked preliminary preparations (mise-en-place).
    • Basic preparation and cooking methods.
    • Appropriate cooking methods for specific food items.
    • Appropriate equipment for specific tasks.
    • Preparation of stocks, soups and sauces.
  • Correct storage and holding of prepared foods.
  • Maintenance of food safety and hygiene.
  • Maintenance of commodities.
  • Judging essential qualities of basic commodities.
  • Judging safe conditions of basic commodities.

 

Serving of Qualification

This programme, including the training and assessment of both levels, requires 22 x 5 hour days.  Training sessions can be presented over a period of time i.e. 1 session per week, from 08:00 to 13:00, to accommodate the availability of public transport.
