Nicole knows about Fresh Living

Nicole Galante (Professional Cookery student; 2013 intake) can be proud to boast her “Triple Chocolate Cake” in this month’s Fresh Living (Pick ‘n Pay) magazine.

In the Reader’s Recipe section of Fresh Living, Nicole’s decadent chocolate cake is proudly published.

We asked Nicole a few questions about her famous Chocolate Cake.

Why do you read the Fresh Living Magazine?

I like all the interesting recipes and facts in all the different magazine issues.

Where did you hear about entering your recipe?

While doing my “going green” assignment, I read it in the magazine, as I used the Fresh Living magazines for the assignment.

If the recipe a family recipe? Where did you find it?

It is a recipe my sister and I made up when we had our own little business baking cakes for staff at my mother’s work. It was a big hit.

Do you enjoy baking?

I love it, I would love to become a Pastry Chef one day.

Which chef is your inspiration?

Marco Pierre White

What are your plans after Graduation?

I would love to get a job anywhere doing pastry work.

Ingredients:
4 extra-large Eggs, separated
1 cup (250ml) Castor Sugar
1/2 cup (125ml) Vegetable Oil
1/2 cup (125ml) boiling Water
1 Tablespoon (15g) softened, Butter
1 cup (150gr) Flour
1 Teaspoon (5ml) Salt
1 Tablespoon (15ml) Baking Powder
3 Tablespoons (45ml) Cocoa Powder
1/2 cup (125ml) Chocolate Chips
1 tub (300gr) PnP Chocolate Ganache

Makes 1 x 22cm cake
Method:
• Preheat the oven to 180oC.
• Beat egg yolks with castor sugar until pale.
• Add oil, water and butter and beat until well combined.
• Sift dry ingredients together and stir into yolk mixture.
• Whisk egg whites until stiff peaks form and fold into cake batter.
• Stir in chocolate chips.
• Pour batter into a greased 22cm cake pan and bake for 30-35 minutes or until an inserted skewer comes out clean. Cool.
• Ice cooled cake with ganache and serve with filter coffee of your choice.
