Grant Scheltens crowned Goldcrest Young Chef of the Year

The annual Goldcrest Young Chef of the Year competition was held yesterday at the South African Chef’s Association’s Centre for Culinary Excellence in Johannesburg. Winner was Grant Scheltens from The Capital Hotel School and Training Academy in Pretoria. His prize is an all-expenses paid trip to the UK for a week-long, culinary experience in one of Heston Blumenthal’s restaurants (The Fat Duck in Bray, The Hinds Head in Bray and Dinner by Heston Blumenthal at the Mandarin Oriental Hotel, Hyde Park in London).

Goldcrest, part of the Patley’s group, supplies a wide variety of top quality canned and bottled ingredients to the hospitality industry. Goldcrest’s support of this competition is as much to highlight new chefs in industry, as it is to expose them to its product range. This year the competition increased the level of difficulty, with entrants needing to demonstrate how food feeds the five senses as well as incorporate elements of molecular gastronomy.

Contestants had to prepare a four-course tasting menu for ten people using one or more Goldcrest product per dish and each dish needed to focus on one of the senses – sight, sound, touch, taste and smell. One of the four dishes had to demonstrate an understanding of some aspect of molecular gastronomy by the contestant.

Scheltens’s winning menu was meticulously presented and he says the result of extensive research:
Course 1 – Tomato gelee topped with a quenelle of crème fraiche and served with a parmesan crisp, quince reduction and fresh dill
Course 2 – Crab and shrimp pops served in a chip basket with a homemade teriyaki sauce
Course 3 – Brandy flambéed liver of chicken, scented with curry spice and served as a bunny chow with an orange marmalade sauce
Course 4 – Reconstructed passion fruit curd egg served candied bacon and honey-milk ice cream with rooibos tea caviar.

The Capital Hotel School and Training Academy, have right to be proud as Charmaine Daffue placed third in this prestigious competition.
