CHS EXPRESS Tutorial: Cheese & Wine Pairing

Today we make use of the pleasant weather and indulge in a wine and cheese pairing.  This is an alternative to the pre-braai snacks and drinks traditionally served on summer weekends.

This CHS EXPRESS Tutorial is presented by Chef Alicia Giliomee and Jeff Lopes, Fine Wine and Spirit Specialist at KWV.

Cheesy topic

Omit the crinkle cut chips and opt for a box of mixed crackers instead and splash out on some preserves and chutneys to compliment your cheese-board.

The CHS spread consisted of tangy Chèvre, matured Cheddars with preserved and fresh fruit.

Tip:  Make sure you have a selection of cheese to ensure there’s something for everyone.  A good balance would be to present Soft Cheese (i.e. Brie), Semi-Soft Cheese (i.e. Gouda), Semi-Hard and a Hard Cheese (i.e. Mature Cheddar) and then add a selection of fruit, nuts and crackers.

Jeff paired Laborie Wines with the South-African cheese board Chef Alicia presented; here’s the matches they discussed:

  • Laborie Sauvignon Blanc (2016) paired with the tangy Chèvre cheese;
  • Laborie Pale Dry Sherry paired with the roasted Cumin, matured, Cheddar cheese;
  • Laborie Merlot Cabernet Sauvignon paired with prunes, figs and 12-month Mature, Smoked Cheddar;
  • Pineau de Laborie paired with Cremezola.

We are spoiled for choice when it comes to displaying a cheese board, from modern bamboo-materials to the rare wood boards.  These days slate is a popular choice as the host/hostess can write the options on the board with a piece of chalk (only to be washed off after the event).

Chef Alicia discusses her preference for a Twice-baked Blue Cheese Souffle as an option to a light starter – and in this summer time heat it will be a hit with a beautiful fresh salad.  A delicate and airy souffle can be flavoured with fresh herbs, smoked paprika or even a selection of cheeses.

The Cheese Fondue is making it’s return, now sporting a new modern jacket with matured, bold cheddars and craft beer concoctions.
